Alaska Salmon Shepherd's Pie

Flaked Alaska salmon tossed with mixed vegetables, and dill weed. Salmon mixture is spooned into a small casserole dish, topped with mashed potatoes and baked until golden brown. Casserole is garnished with paprika just prior to serving.

Ingredients -
1 (14-3/4 ounces) can Alaska Salmon
1 (10 ounces) package Frozen Mixed Vegetables, thawed
3/4 teaspoon Dill Weed
2 cups Prepared Mashed Potatoes
Paprika, to taste
 
Preparation:

1. Preheat oven to 400 F.

2. Remove salmon from can to shallow bowl. Reserve 2 tablespoons packing liquid, discard remainder.

3. Remove bones and flake salmon.

4. Toss flaked salmon with mixed vegetables, dill weed and reserved salmon liquid.

5. Spoon the salmon mixture into small 1 quart deep casserole dish.

6. Spoon mashed potatoes evenly over the top of the salmon.

7. Bake in preheated oven 20 to 25 minutes.

8. Place under broiler 1 minute if desired to brown top.

9. Garnish with paprika just prior to serving.
