Baked Salmon Dijon

Salmon seasoned with garlic powder and fresh black pepper is covered with Dijon dill sauce and baked to perfection.
Ingredients -

1 cup Sour Cream
2 teaspoon Dill Weed
3 tablespoon chopped Scallions
2 tablespoon Dijon Mustard
2 tablespoon Fresh Lemon Juice
1-1/2 pounds Salmon Fillet With Skin
1/2 teaspoon Garlic Powder
1/2 teaspoon Fresh Ground Black Pepper

 
Preparation:

1. Preheat oven to 400 F.

2. In a medium bowl, whisk sour cream, dill weed, chopped scallions, Dijon mustard, and lemon juice.

3. Spray baking sheet with cooking spray.

4. Place salmon (skin side down) on baking sheet.

5. Season salmon with garlic powder and fresh ground black pepper.

6. Pour sauce over salmon.

7. Bake salmon 20 minutes or until cooked through.

Storing Salmon
Wrap salmon in a damp cloth, and then wrap in heavy-duty plastic wrap or freezer paper. The damp cloth insures the salmon will not dry out.

Freezing Salmon
When you purchase frozen salmon, return it to the freezer as soon as possible for best results. Avoid partial or full thawing if you will re-freeze.
