Baked Salmon In Creamy Dill Sauce

Baked salmon, carrots, and bell pepper topped with a dill flavored cream cheese mixture.
Ingredients -

1-1/2 pounds Salmon, fillet or steak
2 Carrots, cut into matchsticks
1 Red Bell Pepper, cut into thin strips
1/4 cup All-Purpose Flour
4 ounces Cream Cheese, softened
1-1/4 cups Milk
grated Rind of One Lemon
1 tablespoon chopped Fresh Dill or Chives OR 1 teaspoon Dried Dill
1/2 teaspoon Salt
1/4 teaspoon Fresh Ground Pepper
4 Fresh Lemon Wedges

 
Preparation:

1. Preheat oven to 375 F.

2. Butter the bottom and sides of a larger baking dish.

3. Place salmon pieces in baking dish. Make sure the pieces do not touch each other.

4. Spread carrots and bell pepper strips on top of salmon.

5. Add flour and cream cheese to large mixing bowl.

6. Beat until smooth with electric mixer.

7. Gradually pour in milk, rind, salt and pepper.

8. Pour cream cheese mixture over salmon.

9. Bake uncovered for 15 minutes, or until salmon flakes easily with a fork.

10. Remove salmon from oven and cool 5 minutes.

11. Transfer salmon from baking dish to serving platter. Top with extra vegetables and sauce.

12. Serve with lemon wedges.
