Beer Marinated Salmon With Salsa

Baked salmon fillets served with fresh salsa featuring bell pepper, cilantro, and hot sauce.
Ingredients -

4 Salmon Fillets (or steaks)
1/4 cup Fresh Lime Juice
1/2 cup Beer
1 tablespoon Fresh Cilantro
2 cloves Garlic, minced
2 tablespoons Onions, minced
1/2 Red Pepper, chopped
1/2 Green Pepper, chopped
1/2 Yellow Pepper, chopped
2 tablespoons Chunky Salsa
2 tablespoons Fresh Cilantro
1 teaspoon Hot Sauce (or to taste)

 
Preparation:

1. In small bowl, combine lime juice, beer, fresh cilantro, minced garlic, and onion.

2. Place fillets in shallow ceramic baking dish.

3. Pour sauce over salmon. Turn salmon to coat.

4. Cover baking dish with plastic wrap and refrigerate 4-6 hours.

5. Preheat oven to 350 F.

6. Remove salmon from marinade and discard marinade.

7. Bake fish 10 minutes per inch of thickness.

8. In small bowl, combine peppers, salsa and cilantro. Season with salt and pepper.

9. Plate salmon and spoon salsa mixture as sauce.
