Citrus Infused Salmon With Spices And Marinade

Salmon marinated in fresh citrus juices, sprinkled with a chipotle rub, baked golden brown and garnished with lime wedges, pineapple slices, and pineapple leaves.
Ingredients -

3 tablespoons Cinnamon Chipotle Rub
2 teaspoons grated Lime Zest
1 teaspoon Ground Cumin
2-1/2 pounds Whole Salmon Fillet
3/4 cup Pineapple
3/4 cup Orange Juice
2 tablespoons Lime Juice
Pineapple slices, for garnish
Lime wedges, for garnish
Pineapple Leaves, for garnish

 
Preparation:

1. Combine chipotle rub, grated lime zest, and ground cumin in small bowl.

2. Add salmon to large baking dish. Pour pineapple juice and orange juice over salmon.

3. Cover baking dish with plastic wrap and marinate 15 minutes.

4. Preheat oven to 450 F.

5. Line separate baking dish or rimmed baking sheet with foil.

6. Place salmon skin side down on foil, and discard marinade.

7. Sprinkle rub mixture over salmon.

8. Bake 20 minutes, or until fish flakes easily.

9. Remove salmon from baking dish, leaving the skin behind. Transfer salmon to serving platter.

10. Garnish with pineapple slices, lime wedges, and pineapple leaves.

Grilling Salmon
When grilling salmon, the coals should be hot but not too hot. It is best to wait a little longer than normal, a few minutes after the coals have turned ash white, before grilling.

Grilling Whole Fish
For whole fish and large fillets, the indirect method of grilling is slower and gentler. The coals or heat source is hot on one side of the grill, while the fish cooks on the other side. Always keep the lid closed as long as possible.
