Easy Salmon And Bok Choy

Salmon fillet is cooked in slow cooker with fresh ginger, garlic and a sauce prepared from chicken broth, rice vinegar, white sugar, and soy sauce. Bok choy is add to slow cooker along with Hoisin sauce after salmon has a chance to cook through. Salmon is served with bok choy and garnished with thinly sliced green onions.

Ingredients -

1-1/2 pounds Salmon, patted dry
3 tablespoons Fresh Ginger, finely chopped
2 cloves Garlic, minced
1/2 cup Low-Sodium Chicken Broth
3 tablespoons Rice Vinegar
2 tablespoons Sugar
2 tablespoons Low-Sodium Soy Sauce
1 head Bok Choy, (medium) trimmed and cut into 1-inch pieces, stems and leaves separated (4 cups each)
1 teaspoon Hoisin Sauce
1/4 cup Scallions, thinly sliced

 
Preparation:

1. Spray large crockpot with non-stick cooking spray.

2. Arrange salmon in bottom of crockpot.

3. Sprinkle fresh ginger and garlic over salmon fillet.

4. Add chicken broth, rice vinegar, sugar, and soy sauce to medium saucepan. Bring to a boil over medium high heat.

5. Pour chicken broth mixture around salmon.

6. Cook on LOW for 1 hour.

7. Add bok choy stems to crockpot. Cook on LOW for additional 30 minutes.

8. Add bok choy leaves. Cook on LOW for additional 30 minutes.

9. Carefully remove salmon to large platter. Cover with foil to keep warm.

10. Stir Hoisin sauce into crockpot liquid.

To Serve:
1. Pour reserved liquid and bok choy over salmon.

2. Garnish with scallions.
