Glazed Salmon with Asian Style Orange Salad

Salmon brushed and marinated in Asian ginger salad dressing and then broiled for 10 minutes. Mixed salad greens are tossed with Asian ginger salad dressing, fresh orange juice, and thinly sliced onion. Salad is plated and salmon fillets are served on top. Toasted almonds are sprinkled as a garnish.

Ingredients -
4 Salmon Fillets
1/3 cup Asian Ginger Salad Dressing
2 tablespoon Orange Juice
1/2 cup Red Onion, thinly sliced
8 cups Salad Greens
4 Oranges, peeled and sliced
1/3 cup Almonds, unsalted, toasted, chopped
 
Preparation:

1. Preheat the broiler.

2. Line a rimmed baking sheet with foil.

3. Place the salmon skin side down on the sheet.

4. Brush the fillets with 2 tablespoons of the Asian ginger dressing.

5. Let the fish marinate for 15 minutes.

6. In a large bowl, add the dressing, orange juice, and onions.

7. Toss to coat.

8. Broil the salmon for 10 minutes or until it flakes easily.

9. Add the greens and oranges to bowl with the onion mixture.

10. Toss to coat thoroughly.

11. To serve, arrange the salad on individual plates.

12. Remove the skin from the salmon and place the fillets on the greens.

13. Sprinkle with toasted almonds and serve.

Pan Frying

To pan fry salmon, melt butter or heat oil very hot before adding fish to skillet. The pan searing locks the oils and juices inside the salmon.

Pan Frying Breaded Salmon

When pan frying salmon, rinse the filets quickly and pat dry with damp cloth. Dip filets in milk or buttermilk, and dredge in fine bread crumbs or flour. Fry in hot deep enough to come half way up the side of the filet when frying. Fry 3 to 5 minutes on each side, turning once.
