Grilled Salmon Steaks With Savory Blueberry Sauce

Salmon steaks are brushed with extra-virgin olive oil and seasoned with coarse salt and fresh ground black pepper. The steaks are cooked on the grill over hot coals. Grilled salmon is topped with blueberry sauce prepared from chicken stock, balsamic vinegar, fresh orange juice, honey, cornstarch, fresh blueberries, and chopped fresh chives.

Ingredients -

1/2 cup Chicken Stock
1/4 cup Balsamic Vinegar
1/4 cup Orange Juice
1 teaspoon Honey
1 tablespoon Cornstarch
1/4 cup Chicken Stock
1 cup Fresh Blueberries
2 teaspoons chopped Fresh Chives
4 (6 ounces) Salmon Steaks
2 tablespoons Extra Virgin Olive Oil
Salt and Pepper, to taste

 
Preparation:

1. Add chicken stock, balsamic vinegar, orange juice, and honey to medium saucepan.

2. Bring to a boil over high heat.

3. Reduce heat to medium.

4. Stir in cornstarch. Continue stirring until sauce thickens and clears.

5. Reduce heat to low. Stir in blueberries and chopped chives.

6. Preheat grill to medium heat.

7. Brush salmon with olive oil.

8. Season with salt and pepper.

9. Grill salmon 3-4 minutes per side. Salmon should flake easily with fork.

To Serve:
1. Plate grilled salmon steaks

2. Garnish with blueberry sauce.
