Lemon Dill Salmon Skewers

Salmon marinated in lemon juice, lemon rind, fresh dill and extra virgin olive oil. Grilled and served with lemon wedges.
Ingredients -

1-½ pound Salmon Fillets, skin removed and discarded
3 tablespoons Fresh Dill, chopped
2 tablespoons Extra-Virgin Olive Oil
1/2 teaspoon Lemon Rind, grated
2 tablespoons Lemon Juice
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 Dash Hot Pepper Sauce
Lemon, cut into 8 wedges
4 long Metal Skewers

 
Preparation:

1. Preheat grill to medium heat.

2. Cut salmon into 1½-inch cubes.

3. Add chopped fresh dill, extra virgin olive oil, lemon rind, lemon juice, salt, pepper, and hot pepper sauce to ceramic bowl.

4. Add salmon cubes to marinade and let stand 10 minutes.

5. Skewer 1 lemon wedge, followed by 5-6 pieces of salmon, and 1 lemon wedge.

6. Reserve marinade.

7. Place kabobs on grill over direct heat. Brush salmon with marinade and discard marinade.

8. Close grill lid.

9. Grill 10 minutes, turning twice.

 



Salmon Tips -
Steaming Salmon
If you are using a steaming basket, arrange salmon pieces on rack and pour water or wine over fish into bottom of steamer. Add any seasonings to steaming water. Steam salmon one minute per ounce of salmon.

Place salmon in steamer basket. Add wine or water to steamer bottom. Season liquid with herbs. Steam salmon 1 minute per ounce of salmon.
