Maple Chipotle Salmon With Orange Dill Sauce

Roasted salmon basted in a sauce featuring maple syrup, and chipotle chili powder. Served with a citrus dill sauce.
Ingredients -

3 pounds Salmon Fillet
1/2 cup Pure Maple Syrup
1 tablespoon Coarse Ground Dijon Mustard
1/2 teaspoon Ground Chipotle Chile Powder
1/4 teaspoon Ground Pepper
1/2 cup Sour Cream
2 tablespoons Mayonnaise
1 tablespoon chopped Fresh Dill
1 Orange, zested and juiced

 
Preparation:

1. Heat oven to 450 F.

2. Spray broiler pan with non-stick cooking spray.

3. Place salmon on broiler pan.

4. Add pure maple syrup, coarse ground Dijon mustard, ground chipotle powder, and fresh ground pepper in small bowl. Whisk to combine.

5. Spread 2-tablespoons syrup mixture over salmon fillet. Let stand 10-15 minutes.

6. Preheat broiler. Roast salmon 12-15 minutes, 5-6 inches from broiler, basting several times with syrup mixture.

7. Salmon should flakes easily when done.

8. In separate small bowl, combine sour cream, mayonnaise, chopped fresh dill, and 1-tablespoon orange juice.

To Serve:
1. Remove salmon to serving platter.

2. Serve citrus dill sauce with salmon.

Poaching Salmon
Add chicken broth, wine or herb seasoned water to poaching vessel, such as a small baking dish, or skillet. Poaching liquid should cover fish. Poach over medium high heat or 350 F. oven temperature for 6 to 7 minutes.

Add poaching liquid (herb seasoned water, white wine, chicken broth) to skillet. Heat over medium heat, but do not boil. Add salmon pieces to poaching skillet. Make sure salmon is covered by liquid. Poach 6 to 7 minutes.
