Pan Seared Salmon Cakes

Salmon cakes prepared from flaked baked salmon, finely chopped onion, bread crumbs, beaten egg, fresh lemon juice, chopped fresh marjoram, coarse salt and ground dry mustard. Patties are pan fried until golden brown and served with chilled lemon wedges.

Ingredients -
1 pound Salmon, cooked and flaked (about 3 cups)
1 medium Yellow or White Onion, finely chopped
2 Bread Slices, torn into crumbs
2 Large Eggs, beaten
2 tablespoons Fresh Lemon Juice
1 teaspoon chopped Fresh or 1/2 teaspoon Dried Marjoram Leaves
1/2 teaspoon Coarse Salt
1/2 teaspoon Ground Dry Mustard
1 tablespoon Vegetable Oil
 
Preparation:

1. In a bowl, combine the salmon, onion, bread crumbs, eggs, lemon juice, marjoram, salt and mustard and mix thoroughly.

2. Add the oil and cook the patties for 8 minutes turning once, in a 10 inch skillet over medium heat until golden brown.

3. Serve with lemon wedges.
