1. Soak skewers.
2. Preheat grill or broiler.
3. Melt pineapple preserves in microwavable bowl 1 minute or until melted.
4. Stir in chipotle peppers and 1 tablespoon chopped fresh cilantro.
5. In small bowl, toss fish with chipotle peppers, and melted preserves. Let stand 10 minutes.
6. Thread peppers and fish alternately on skewers. Discard marinade.
7. Grill 10 minutes, turning twice.
8. Sprinkle with remaining cilantro.
