Pineapple Glazed Salmon Kebabs with Bell Pepper

Salmon marinated in spicy pepper sauce, skewered with bell pepper and grilled.
Ingredients -
1/2 cup Pineapple Preserves
2 tablespoons chopped Chipotle Peppers in Adobo Sauce
2 tablespoons chopped Fresh Cilantro
1-1/2 pounds Salmon Fillets
2 Red, Green and/or Yellow Bell Peppers, cored and quartered
8 Wooden Skewers, soaked in water 30 minutes
 
Preparation:

1. Soak skewers.

2. Preheat grill or broiler.

3. Melt pineapple preserves in microwavable bowl 1 minute or until melted.

4. Stir in chipotle peppers and 1 tablespoon chopped fresh cilantro.

5. In small bowl, toss fish with chipotle peppers, and melted preserves. Let stand 10 minutes.

6. Thread peppers and fish alternately on skewers. Discard marinade.

7. Grill 10 minutes, turning twice.

8. Sprinkle with remaining cilantro.

Pan Frying Salmon
Rinse salmon in cold water, pat dry to eliminate moisture and season both sides of the fillets or steak. Heat skillet over medium heat. Add oil or butter to skillet and heat until hot. Add salmon and fry 3 to 5 minutes per side.
