Pizza with Smoked Salmon

Ready-made pizza crust topped with mixed baby greens, chopped tomato, fresh chopped basil, and smoked salmon. Pizza is drizzled with olive oil and seasoned with wild fennel, coarse salt, fresh ground black pepper. Topped with parmesan cheese and baked until the cheese has melted.

Ingredients -
1 large Boboli Pizza Crust
Mixed Baby Greens
2 Ripe Tomatoes, chopped
1 small bunch Basil, chopped
1/2 pound Smoked Salmon, sliced
Extra-Virgin Olive Oil
10 sprigs Wild Fennel
Coarse Salt
Fresh Ground Pepper
Fresh Parmesan Cheese
 
Preparation:

1. Heat the Boboli for 10 minutes in a 425 degree oven.

2. Remove and while still hot, evenly sprinkle the greens, tomatoes, basil and smoked salmon.

3. Drizzle with olive oil, wild fennel sprigs, salt and pepper.

4. Top with parmesan shavings.

5. Pop it back in the oven for 5 minutes or until the parmesan has melted.

6. Serve immediately.

Preheat broiler and broiling pan. Wash filets in cold water and pat dry. Brush filets with butter and season to taste with salt, pepper, spices and herbs. Broil filets, basting often with butter. Flip once to cook both sides through.
