Poached Salmon With Curried Yogurt Sauce

Salmon fillets topped with yogurt sauce featuring curry powder and fresh cilantro.
Ingredients -

1-1/2 pounds Skinless Salmon Fillet
Coarse Salt, such as kosher
1 cup Plain Low-Fat Yogurt
1 to 2 teaspoons Curry Powder
1/4 cup chopped Fresh Cilantro
Coarse Salt and Pepper

 
Preparation:

1. Place salmon fillets in non-stick extra large skillet.

2. Add enough cold water to cover salmon. Season water with salt.

3. Bring water to boil over high heat. Cover skillet and remove skillet from stovetop.

4. Poach salmon 20 minutes.

5. Remove salmon from skillet and cool.

6. Add yogurt, curry powder, and cilantro to small bowl. Season with salt and pepper.

7. Cut salmon fillet into 4 equal pieces.

8. Top fillets with curry sauce. Serve hot.
