Quick Salmon With Herb Crust

Salmon is coated with herb mixture consisting of fresh oregano, fresh cilantro, sliced green onion, garlic, fresh lemon juice, olive oil, coarse salt and fresh ground black pepper. Prepared salmon is grilled over direct heat until cooked through and browning along edges.

Ingredients -

12 ounces Fresh Skinless Salmon Fillets, 3/4-inch thick
1/3 cup coarsely chopped Fresh Oregano
1/3 cup coarsely chopped Fresh Cilantro
1/4 cup sliced Green Onion
1 clove Garlic
1 tablespoon Fresh Lemon Juice
2 teaspoons Olive Oil
1/4 teaspoon Salt
1/8 teaspoon Pepper

 
Preparation:

1. Preheat grill over medium heat.

2. Cut fillet into 2 (6 ounces each) pieces.

3. Rinse salmon fillets and pat dry.

4. Add fresh oregano, fresh cilantro, sliced green onion, garlic to food processor.

5. Cover food processor and pulse until well blended.

6. Transfer herb mix to shallow bowl. Stir in fresh lemon juice, olive oil, salt, and pepper.

7. Coat salmon on both sides of with herb mixture.

8. Grill salmon on oiled grill grate over direct heat. Cook 6-9 minutes, turning once.
