Salmon Au Poivre

Salmon steaks marinated in lemon juice and garlic, covered with pepper, and pan fried until golden brown.
Ingredients -

4 Salmon Steaks, skin removed
2 tablespoons Lemon Juice
1 teaspoon minced Garlic
1/2 teaspoon Salt
3 tablespoons Coarse Ground Black Pepper
Lemon Slices

 
Preparation:

1. Place salmon steaks in large ceramic baking dish.

2. Add lemon juice, minced garlic and salt to baking dish. Coat fillets on all sides with garlic mixture.

3. Allow salmon to marinate in garlic mixture for 5 minutes.

4. Preheat non-stick skillet over medium heat.

5. Pour the pepper on a shallow plate.

6. Press salmon fillets into pepper, shake off excess.

7. Pan fry the salmon steaks 4-5 minutes. Turn and cook additional 4-5 minutes.

8. Garnish with lemon slices and serve.

Fillets are easiest to work with. Most markets will already have salmon bones removed. If not, use a pair of needle nose pliers and pull them out.
