Salmon Burgers

Salmon patties prepared by combining flaked salmon, beaten egg, chopped white onion, chopped bell pepper, bread crumbs, fresh lemon juice, fresh lemon peel, dried rosemary and fresh ground black pepper. Patties are shaped and fried until golden brown and cooked through.

Ingredients -
1 (14.75 ounces) can Salmon, drained, flaked, any skin and bones removed
1 Large Egg, slightly beaten
1/2 cup chopped White Onion
1/2 cup finely chopped Green Bell Pepper
1/2 cup fresh Whole Wheat Bread Crumbs
1 tablespoon Fresh Lemon Juice
1 teaspoon grated Fresh Lemon Peel
1/2 teaspoon Dried Rosemary, crushed
1/8 teaspoon Fresh Ground Black Pepper
1 tablespoon Vegetable Oil

Preparation:

1. Add flaked salmon, beaten egg, chopped white onion, chopped bell pepper, bread crumbs, fresh lemon juice, fresh lemon peel, dried rosemary and fresh ground black pepper to glass bowl. Stir to combine.

2. Cover with plastic and refrigerate at least 30 minutes.

3. Form salmon mixture into 4-5 patties.

4. Add vegetable oil to heavy non-stick skillet. Cook 3-4 minutes per side, until golden brown on the outside and patties are cooked through.

To Serve:

Serve on hamburger buns with your favorite condiments.
