Salmon Fettuccine

Sautéed zucchini and mushrooms combined with salmon, green peas, dried oregano, fresh parsley, coarse salt, and fresh ground pepper. Salmon mixture served over prepared fettuccine noodles.

Ingredients -
1 pound Uncooked Fettuccine Pasta Noodles
1/4 cup Unsalted Butter
2 medium Zucchini, sliced
1 cup Fresh Shiitake or Button Mushrooms, sliced
2 tablespoons All-Purpose Flour
1-1/2 cups Whole Milk
1-1/2 cups Fresh Cooked Salmon, flaked
1 (10 ounces) package Frozen Peas, thawed
1/2 teaspoon Dried Oregano
1 tablespoon chopped Fresh Parsley
Coarse Salt
Ground Black Pepper, to taste
 
Preparation:

1. Cook fettuccine noodles as directed by packaging.

2. Add unsalted butter to skillet. Melt over medium heat.

3. Sauté sliced zucchini and sliced mushrooms in melted butter.

4. Add flour and milk to small bowl. Stir to combine.

5. Stir flour mixture into skillet.

6. Stir until sauce thickens.

7. Add cooked, flaked salmon, peas, dried oregano, chopped fresh parsley, salt and pepper to skillet.

8. Cook until just warmed through.

9. Serve over fettuccine noodles.

Fruit should be placed on the outer parts of the grill grate, or over direct coals when they begin to die out. It is best to use indirect heat, if possible to grill fruit.
