Salmon Patties

Salmon cakes featuring jalapeno, onion, bell pepper, and potato. Sauteed until browned and cooked through.
Ingredients -

1/2 cup crushed Cracker Crumbs
1 Jalapeno Chili Pepper, seeded and minced
1/2 cup diced White Onion
1/2 cup diced Green Bell Pepper
1 Large Baking Potato, peeled, boiled and shredded
2 (14.75 ounces) cans Red or Pink Cooked Salmon, drained, flaked and any skin or bones removed
1 Large Egg, beaten
1 teaspoon Fresh Ground Black Pepper
2 tablespoons Vegetable Oil

 
Preparation:

1. Add flaked salmon to large bowl.

2. Stir in minced jalapeno, diced onion, diced green bell pepper, shredded potatoes, beaten egg and fresh ground pepper. Mix well.

3. Divide into 4 equal balls. Press into salmon cakes.

4. Coat salmon cakes with cracker crumbs.

5. Add oil to large non-stick skillet. Heat over medium heat.

6. Carefully place salmon patties in hot oil. Cook 3-4 minutes or unitl golden brown and cooked half through.

7. Turn and cook additional 3-4 minutes.

Cooking Salmon
Avoid overcooking salmon as it can become very dry and un-enjoyable. Cook until the flesh becomes firm. Test doneness at the thickest point of the fillet or steak.

Leftover Salmon
Leftover cooked salmon is perfect for soups, salads, pasta sauces and sandwich or cracker spreads. Bake some extra to use for the next day.
