Salmon Quesadillas

Sautéed garlic, salmon, dried basil and fresh ground black pepper are simmer until salmon is cooked through. Prepared tortillas are placed in skillet, topped with mozzarella cheese, the salmon mixture, and heated until the tortilla is golden and the cheese has melted. Quesadillas served with fresh guacamole and homemade salsa.

Ingredients -
2 Garlic Cloves, minced
1 teaspoon Vegetable Oil
1 (14-¾ ounces) can Cooked Salmon, any bones or skin removed and flaked
1 to 2 teaspoons Dried Basil
1/2 teaspoon Fresh Ground Black Pepper
1 tablespoon Unsalted Butter
Flour Tortillas
2 cups shredded Mozzarella Cheese
Guacamole
Salsa
 
Preparation:

1. Sauté minced garlic in vegetable oil over medium heat until tender.

2. Stir in flaked salmon, dried basil, and fresh ground black pepper.

3. Cover and cook until salmon is cooked through.

4. Heat separate skillet over medium heat.

5. Spread butter on one side of tortilla.

6. Place buttered side down on hot skillet.

7. Sprinkle ˝-cup mozzarella cheese, and ˝-cup salmon mixture on one side of cooking tortilla.

8. Fold over. Cook additional 2 minutes.

9. Serve with guacamole or salsa.

Fruits

Fruits should always be cut into pieces large enough so they don’t fall through the grate. Cut pieces as consistent as possible so everything finishes at the same time, otherwise remove fruit as it finishes grilling, to avoid overcooking.

Grill fruit with the skin on as it helps pieces retain their shape. Softer fruit really benefit from this technique.
