Salmon Tacos

Delicious salmon tacos feature chunky salsa, green chilies, and black beans. Topped with vegetable and cheeses.
Ingredients -

1 (14-3/4 ounces) can Alaska Salmon, drained, flaked, skins and bones removed
1-1/2 cups Thick and Chunky Salsa
1 (4 ounces) can Diced Green Chiles, drained
1 (8-3/4 ounces) can Black Beans, rinsed and drained
8 Corn Taco Shells

Toppings:
Medium or Hot Salsa
shredded Lettuce
diced Green Onion
diced Tomatoes
grated Cheddar or Monterrey Jack Cheese
sliced Black Olives
sliced Avocado
Sour Cream

 
Preparation:

1. Add chunky salsa, diced green chilies, black beans to large saucepan. Heat over low, stirring gently.

2. Add salmon and continue stirring, until salmon is cooked through.

3. Transfer salmon mixture to serving dish.

To Serve:
1. Arrange taco shells on serving platter.

2. Offer toppings in separate bowls.

Salmon is not difficult to prepare and is a healthy choice to any menu. Salmon is excellent raw, poached, steamed, broiled, pan fried and grilled.

Some smoked salmon can be very salty. Test the salmon before adding the smoked salmon to the dish. Omit salt if necessary, or soak the salmon in cold water to remove excess sodium.
