Seared Mustard Coated Salmon

Salmon fillets coated in mixture of sugar and dry mustard powder. Pan fried in olive oil until golden brown and transferred to the oven to finish cooking.

Ingredients -
2 tablespoons Extra Virgin Olive Oil
2 tablespoons Granulated Sugar
2-1/2 tablespoons Dry Mustard Powder
6 (6-8 ounces each) Skinless Salmon Fillets
 
Preparation:

1. Preheat the oven to 400 degrees.

2. In a skillet, add 1 tablespoon of olive oil and heat until hot.

3. In a shallow dish, add 1 tablespoon sugar and 1 1/4 tablespoon dry mustard.

4. Coat both sides of the fillets.

5. Add the salmon to the skillet and cook for 2 minutes per side or until golden brown.

6. Transfer the fillets to a rimmed baking sheet.

7. Repeat with the rest of the olive oil, salmon fillets, mustard and sugar.

8. Bake for 8 minutes or until the salmon is brown on the outside and a pink on the inside.
