Seared Salmon with Orange Glaze

Seared salmon fillets transferred to baking dish and drizzled with soy sauce and white wine. Salmon finished in hot oven. Sauce is prepared on stovetop from fresh orange juice, orange zest, dry sherry, fresh ginger, and orange slices. Salmon is served hot topped with orange sauce.

Ingredients -
6 (6 ounces each) Salmon Fillets, skinned if desired
1 tablespoon un-toasted Sesame Oil
3 teaspoons Soy Sauce
1/4 cup White Wine
1 cup Fresh squeezed Orange Juice
1 teaspoon grated or minced Orange Zest
3 tablespoons Sherry
1/2 teaspoon peeled, grated or minced Ginger Root
2 thin slices Orange, unpeeled
 
Preparation:

1. Preheat oven to 400 F.

2. Add oil to large, heavy skillet. Heat oil over medium-high heat.

3. Add salmon to hot oil. Sear 1 minute on each side.

4. Transfer salmon to glass baking dish.

5. Drizzle with soy sauce and white wine.

6. Bake salmon 10 minutes, or until cooked through.

7. While salmon bakes, add orange juice, orange zest, dry sherry, and fresh ginger to saucepan.

8. Simmer 15 minutes over low heat, or until sauce is reduced by half and thickened.

9. Add orange slices. Cook 15 seconds. Remove from stovetop.

To Serve:

1. Arrange salmon on individual plates.

2. Drizzle salmon with sauce. Serve hot.

Fruit

Brush fruit with melted butter and sprinkle with cinnamon or brown sugar to enhance the flavors. Always apply any additional flavor enhancers toward the end of grilling.

To cook vegetables evenly, cut into uniform pieces. Larger, harder, thicker, pieces will take longer to cook.
